Description

Deliciously chewy pumpkin blondies packed with autumn flavors, perfect for fall indulgence.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, melted butter, brown sugar, and granulated sugar, stirring until well mixed. Add in the eggs and vanilla extract; mix until fully incorporated.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Slowly add the dry ingredients to the wet mixture, stirring until just combined. Add chocolate chips or nuts if desired.
  5. Pour the batter into a greased 9×13 inch baking pan and spread it evenly.
  6. Bake for 25 to 30 minutes, until edges are slightly puffed and a toothpick comes out with a few moist crumbs.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely, then cut into squares.
