Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • Zest of 1 orange
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In a bowl, whisk together the flour, baking soda, and salt. Set it aside.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract, then add the orange zest and stir until combined.
  4. Gradually add the dry mixture to the wet mixture and mix until just combined. Fold in the dried cranberries and walnuts if using.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  7. Scoop tablespoons of chilled dough onto the baking sheet, about 2 inches apart. Bake for 10-12 minutes or until the edges are golden.
  8. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
