Description

Ingredients

  • 1 package cheese tortellini (fresh or frozen)
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chicken or vegetable broth
  • Fresh cilantro (optional, for garnish)
  • Sour cream (optional, for topping)
  • Avocado slices (optional, for topping)
  • Chopped green onions (optional, for topping)

Instructions

  1. Brown the ground meat in a large pot or skillet over medium heat until cooked through.
  2. Drain any excess fat and add diced tomatoes and taco seasoning. Stir and simmer for about 5 minutes.
  3. Add chicken or vegetable broth and gently toss in the tortellini. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  4. Stir in shredded cheese until melted and bubbly.
  5. Serve in bowls and top with sour cream, cilantro, avocado slices, or chopped green onions as desired.
