- 1 package cheese tortellini (fresh or frozen)
- 1 pound ground beef or turkey
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup chicken or vegetable broth
- Fresh cilantro (optional, for garnish)
- Sour cream (optional, for topping)
- Avocado slices (optional, for topping)
- Chopped green onions (optional, for topping)
Instructions
- Brown the ground meat in a large pot or skillet over medium heat until cooked through.
- Drain any excess fat and add diced tomatoes and taco seasoning. Stir and simmer for about 5 minutes.
- Add chicken or vegetable broth and gently toss in the tortellini. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Stir in shredded cheese until melted and bubbly.
- Serve in bowls and top with sour cream, cilantro, avocado slices, or chopped green onions as desired.
