Description

Ingredients

  • 1 lb Ground beef
  • 1 cup cooked Rice
  • 2 cups shredded Cheddar cheese
  • 1 cup Queso cheese
  • 1 medium Onion, chopped
  • 1 medium Bell pepper, diced
  • 1 tsp Garlic powder
  • 1 packet Taco seasoning
  • Salt & pepper to taste
  • Optional toppings: Sour cream, salsa, jalapeños

Instructions

  1. In a medium skillet over medium heat, cook the ground beef, breaking it apart until browned (5-7 minutes). Drain excess fat if necessary.
  2. Add the chopped onion and diced bell pepper, cooking for another 3-4 minutes until soft.
  3. Sprinkle the taco seasoning and garlic powder over the mixture, stirring for about 1 minute.
  4. Mix in the queso cheese and shredded cheddar until well combined.
  5. Add the cooked rice, stirring everything together and adding hot sauce if desired.
  6. Serve in bowls and customize with optional toppings.

Notes

Feel free to add leftovers or swap ground beef for turkey for a healthier option. Experiment with different cheese varieties to enhance flavor.
