- 1 lb Ground beef
- 1 cup cooked Rice
- 2 cups shredded Cheddar cheese
- 1 cup Queso cheese
- 1 medium Onion, chopped
- 1 medium Bell pepper, diced
- 1 tsp Garlic powder
- 1 packet Taco seasoning
- Salt & pepper to taste
- Optional toppings: Sour cream, salsa, jalapeños
Instructions
- In a medium skillet over medium heat, cook the ground beef, breaking it apart until browned (5-7 minutes). Drain excess fat if necessary.
- Add the chopped onion and diced bell pepper, cooking for another 3-4 minutes until soft.
- Sprinkle the taco seasoning and garlic powder over the mixture, stirring for about 1 minute.
- Mix in the queso cheese and shredded cheddar until well combined.
- Add the cooked rice, stirring everything together and adding hot sauce if desired.
- Serve in bowls and customize with optional toppings.
Notes
Feel free to add leftovers or swap ground beef for turkey for a healthier option. Experiment with different cheese varieties to enhance flavor.
