- 4 potatoes, diced (preferably Russets)
- 1 cup cheddar cheese, shredded
- 1/2 cup cream cheese (optional)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat, breaking it apart with a spatula.
- Add the chopped onions and minced garlic, sautéing until the onions are translucent.
- Add the diced potatoes and enough broth to cover them. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
- Stir in the shredded cheddar cheese and cream cheese (if using), cooking on low until melted and creamy.
- Adjust seasoning with salt and pepper, then serve hot with a sprinkle of parsley on top.
