Description

Ingredients

  • 4 potatoes, diced (preferably Russets)
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese (optional)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it apart with a spatula.
  2. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
  3. Add the diced potatoes and enough broth to cover them. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
  4. Stir in the shredded cheddar cheese and cream cheese (if using), cooking on low until melted and creamy.
