Description

A comforting and hearty casserole made with ground beef, thinly sliced potatoes, and gooey cheddar cheese.

Ingredients

Scale
  • 1 lb ground beef (or turkey)
  • 4 medium potatoes (peeled and sliced thinly)
  • 1 medium onion (chopped)
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • Salt and pepper to taste
  • Optional add-ins: bell peppers, corn, broccoli, garlic powder, paprika

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef and chopped onions until the beef is cooked through.
  3. In a bowl, mix the cream of mushroom soup and milk until smooth.
  4. In a greased baking dish, layer potato slices, browned beef and onions, and drizzle with the soup mixture, repeating the layers and finishing with potatoes.
  5. Sprinkle shredded cheddar cheese over the top.
  6. Cover with foil and bake for 1 hour, then remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.

Notes

Slice potatoes thinly for even cooking. Don’t add too much milk to avoid a soupy texture. Feel free to experiment with different veggies.
