- 1 pound ground beef (or turkey)
- 1 cup rice (white or brown)
- 1 can diced tomatoes (with or without green chilies)
- 2 cups shredded cheese (cheddar, mozzarella, or a mix)
- 1 can cream of mushroom soup
- 1 cup beef broth (or chicken broth)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional toppings: Extra cheese, chopped green onions, sliced avocado
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned, about 6-8 minutes. Drain the fat.
- Add the chopped onion and minced garlic to the skillet and sauté until the onions are soft and translucent, about 3-4 minutes.
- In a large mixing bowl, combine the cooked beef, rice, diced tomatoes, cream of mushroom soup, beef broth, and half of the cheese. Mix well.
- Pour the mixture into a greased casserole dish and top with the remaining cheese.
- Bake in the preheated oven for 30-35 minutes until bubbly and melted.
- Let it sit for 5 minutes before serving. Add optional toppings as desired.
Notes
This casserole can be made ahead and freezes well. Consider adding spices like cumin or chili powder for extra flavor.
