- 8 oz. pasta (penne, rotini, or your choice)
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or cheese blend)
- 1 cup milk (whole, skim, or almond)
- 1 can cream of chicken soup
- 1 cup mixed veggies (peas and carrots)
- Salt & pepper to taste
- Olive oil for cooking
- Optional: Garlic, Onions, Parmesan cheese, Spices (Italian seasoning, paprika, hot sauce)
Instructions
- Cook your pasta according to package instructions until al dente, then drain and set aside.
- In a large mixing bowl, combine shredded chicken, cream of chicken soup, milk, and mixed veggies. Stir until well combined.
- Fold in the cooked pasta and season with salt and pepper. Add any optional ingredients like garlic or onion.
- Sprinkle half of the shredded cheese over the mixture and mix until everything is cheesy and mixed well.
- Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish and top with remaining cheese. Bake for 20-25 minutes until bubbly and golden.
- Let cool for a few minutes before serving. Enjoy!
Notes
Feel free to experiment with different cheeses and add more veggies for a healthier version. You can also make it a one-pot dish to save on cleanup.
