Ingredients

  • 1 pound ground beef
  • 2 large potatoes, diced
  • 2 cups sharp cheddar cheese
  • 4 cups beef broth
  • 1 cup milk or cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Bay leaves, salt, pepper, and Italian seasoning to taste
  • Optional: Carrots, celery, or corn
  • Optional: Paprika or cayenne pepper

Instructions

  1. Heat a large pot over medium heat and add a splash of oil.
  2. Toss in the ground beef, breaking it apart as it cooks until browned.
  3. Add diced onions and minced garlic, cooking until fragrant, and season with salt and pepper.
  4. Toss in diced potatoes and pour in the beef broth, mixing well.
  5. Add bay leaves and Italian seasonings, along with any extra veggies if desired.
  6. Bring to a boil, then reduce to a simmer for about 20 minutes until potatoes are tender.
  7. Stir in milk or cream, then add the cheddar cheese until melted and gooey.
  8. Remove bay leaves, ladle soup into bowls and serve hot.
