Instructions
- Heat a large pot over medium heat and add a splash of oil.
- Toss in the ground beef, breaking it apart as it cooks until browned.
- Add diced onions and minced garlic, cooking until fragrant, and season with salt and pepper.
- Toss in diced potatoes and pour in the beef broth, mixing well.
- Add bay leaves and Italian seasonings, along with any extra veggies if desired.
- Bring to a boil, then reduce to a simmer for about 20 minutes until potatoes are tender.
- Stir in milk or cream, then add the cheddar cheese until melted and gooey.
- Remove bay leaves, ladle soup into bowls and serve hot.
