Description

A delicious homemade version of the iconic Cheesecake Factory Chicken Madeira, featuring tender chicken in a rich wine sauce with mushrooms and asparagus.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • Olive oil (about 2 tablespoons)
  • 1 cup mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 cup chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Asparagus spears
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken breasts generously with salt and pepper. In a large skillet, heat the olive oil over medium-high heat and cook the chicken for 5–6 minutes each side until golden brown and cooked through. Remove the chicken and set aside.
  2. In the same skillet, add more olive oil if needed and sauté the sliced mushrooms for about 4 minutes until browned. Add the minced garlic and cook for 30 seconds. Pour in the Madeira wine and simmer for 5-7 minutes.
  3. Reduce heat, add heavy cream and chicken broth, then simmer for another 5 minutes. Stir in the cornstarch mix and stir until thickened.
  4. Return the chicken to the skillet and simmer for a few minutes to absorb the flavors.
  5. Prepare the asparagus by steaming or sautéing. Serve the chicken with sauce and asparagus on the side, garnished with fresh parsley.
