Description
A creamy and cozy cauliflower potato soup for chilly nights.
Ingredients
1 medium head cauliflower, chopped
3 medium potatoes, peeled & diced
1 onion, chopped
3 garlic cloves, minced
4 cups vegetable broth
1 cup milk
2 tbsp olive oil or butter
Salt & pepper to taste
Fresh parsley or chives
Instructions
1. Heat olive oil, sauté onion & garlic.
2. Add cauliflower and potatoes.
3. Pour broth, bring to boil, then simmer until tender.
4. Blend until smooth.
5. Stir in milk, season with salt & pepper.
6. Serve with garnish.
Notes
Use chicken broth for richness.
Add cheese or bacon for extra flavor.
Vegan option: use coconut milk.
