Description

Delicious and cozy pumpkin cheesecake bars topped with rich caramel, perfect for fall gatherings.


Ingredients

  • 1 ยฝ cups graham cracker crumbs
  • ยฝ cup unsalted butter, melted
  • ยผ cup sugar
  • Pinch of salt
  • 2 (8-ounce) packages of cream cheese, softened
  • 1 cup canned pumpkin puree
  • ยพ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ยฝ teaspoon nutmeg
  • ยผ teaspoon ground ginger
  • A pinch of salt
  • 1 cup caramel sauce
  • Optional: pecans for crunch

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a 9×9-inch baking dish with parchment paper.
  2. Mix together the graham cracker crumbs, melted butter, sugar, and a pinch of salt.
  3. Press this mixture firmly into the bottom of your prepared baking dish.
  4. Bake the crust in the oven for about 10 minutes, until lightly golden.
  5. Beat the cream cheese in a large bowl until smooth, then add pumpkin puree, sugar, eggs, vanilla, and spices.
  6. Pour the cheesecake filling over the cooled crust and spread it evenly.
  7. Bake the bars for 30โ€“35 minutes until just set in the middle.
  8. Drizzle warmed caramel sauce over the top after cooling for 10 minutes.
  9. Chill the bars to room temperature before transferring to the fridge for at least 2 hours.
  10. Slice into bars, top with chopped pecans if desired, and serve.
