- Pinch of salt
- 2 (8-ounce) packages of cream cheese, softened
- 1 cup canned pumpkin puree
- ยพ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ยฝ teaspoon nutmeg
- ยผ teaspoon ground ginger
- A pinch of salt
- 1 cup caramel sauce
- Optional: pecans for crunch
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and line a 9×9-inch baking dish with parchment paper.
- Mix together the graham cracker crumbs, melted butter, sugar, and a pinch of salt.
- Press this mixture firmly into the bottom of your prepared baking dish.
- Bake the crust in the oven for about 10 minutes, until lightly golden.
- Beat the cream cheese in a large bowl until smooth, then add pumpkin puree, sugar, eggs, vanilla, and spices.
- Pour the cheesecake filling over the cooled crust and spread it evenly.
- Bake the bars for 30โ35 minutes until just set in the middle.
- Drizzle warmed caramel sauce over the top after cooling for 10 minutes.
- Chill the bars to room temperature before transferring to the fridge for at least 2 hours.
- Slice into bars, top with chopped pecans if desired, and serve.
Notes
Taste and adjust spices as needed for your preference. Letting the bars chill overnight enhances the flavors.
