Description

A comforting dish featuring caramelised soy chicken served in a flavorful garlic ginger broth with rice.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 cups water or chicken stock
  • 4 cloves garlic, sliced
  • 1 inch ginger, grated
  • 1/2 teaspoon chili flakes (optional)
  • 1 cup jasmine rice or brown rice
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Marinate the chicken thighs in soy sauce, brown sugar, and sesame oil for at least 30 minutes.
  2. Prepare the broth by bringing water or chicken stock to a boil, then adding sliced garlic, grated ginger, and chili flakes.
  3. Rinse the rice under cold water until clear.
  4. Cook rice using a 1:1.5 ratio of rice to water for 15-20 minutes.
  5. Heat oil in a pan, then add marinated chicken and sear until golden brown (4-5 minutes per side).
  6. Pour in the broth and let it simmer for another 10-15 minutes until chicken is cooked through.
  7. Serve the rice in bowls, ladle the broth over it, and top with caramelised chicken, green onions, and sesame seeds.

Notes

Flavors develop further if the chicken marinates overnight. Adjust seasoning to taste.
