- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup soft caramel candies (unwrapped)
- 2 tablespoons heavy cream
- Optional: chocolate chips
- Optional: nuts
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract; mix well.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
- Melt caramel candies in a microwave-safe bowl, add heavy cream, and mix until smooth.
- Form a scoop of cookie dough, flatten it, and place a teaspoon of caramel in the center. Fold the dough over to seal and place on a baking sheet.
- Bake for 10-12 minutes until edges are lightly golden and centers are slightly underbaked.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use quality caramel for best results; don’t overmix to avoid tough cookies.
