Description

A creamy, hearty soup combining the warmth of potatoes with a kick of Cajun spices for a perfect bowl of comfort.


Ingredients

Scale
  • 4 large russet or Yukon gold potatoes, diced
  • 1 lb andouille sausage, chopped
  • 1 onion, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups chicken broth
  • 1 cup cream (optional)
  • 2 green onions, sliced for garnish
  • Optional: bell peppers, corn, clam juice

Instructions

  1. Chop all ingredients—potatoes, sausage, onion, and celery.
  2. In a large pot, cook the sausage over medium heat until browned and crispy.
  3. Add onion, celery, and garlic and sauté for 5-7 minutes until softened.
  4. Stir in chopped potatoes and chicken broth; bring to a boil and then reduce to a simmer.
  5. Optionally blend a cup or two of the soup until smooth for extra creaminess.
  6. Stir in cream and adjust seasoning to taste.
  7. Ladle the soup into bowls and garnish with green onions and hot sauce if desired.

Notes

Pairs well with crusty bread, salad, or cornbread. Stores in the fridge for 3-4 days and the freezer for up to 3 months.
