- 4 large russet or Yukon gold potatoes, diced
- 1 lb andouille sausage, chopped
- 1 onion, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 4 cups chicken broth
- 1 cup cream (optional)
- 2 green onions, sliced for garnish
- Optional: bell peppers, corn, clam juice
Instructions
- Chop all ingredients—potatoes, sausage, onion, and celery.
- In a large pot, cook the sausage over medium heat until browned and crispy.
- Add onion, celery, and garlic and sauté for 5-7 minutes until softened.
- Stir in chopped potatoes and chicken broth; bring to a boil and then reduce to a simmer.
- Optionally blend a cup or two of the soup until smooth for extra creaminess.
- Stir in cream and adjust seasoning to taste.
- Ladle the soup into bowls and garnish with green onions and hot sauce if desired.
Notes
