- 2 cups cooked pasta (penne or rotini)
- 2 cups cooked chicken, shredded or diced
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 cup Cajun-seasoned diced tomatoes (canned or fresh)
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Optional: More mozzarella or cheddar cheese, fresh parsley chopped, additional Cajun seasoning
Instructions
- Boil pasta according to package instructions until al dente. Drain and set aside.
- Season chicken with salt, pepper, and Cajun seasoning. Sear in a skillet over medium heat for 5-7 minutes on each side until cooked. Shred or dice.
- In a large skillet, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic and cook for an additional minute.
- Add cream cheese and mix until melted. Pour in chicken broth and stir until combined.
- Add Cajun diced tomatoes, cooked chicken, and pasta. Mix to combine.
- Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish, sprinkle with mozzarella, and bake for 20-25 minutes until cheese is melty and golden.
- Optional: Broil for 2-5 minutes for a crunchy top.
- Let cool before serving and enjoy!
Notes
Feel free to use store-bought rotisserie chicken for a quicker prep. Adjust spices to your liking!
