- 1 medium butternut squash (about 2 pounds)
- 2 boneless, skinless chicken breasts
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Olive oil, as needed
- Fresh herbs (rosemary or thyme)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise, scoop out the seeds, and slice it into cubes.
- Rub the chicken breasts with olive oil, smoked paprika, salt, and pepper.
- In a baking dish, combine chicken, butternut squash, chopped onion, and garlic. Drizzle more olive oil over the top and mix.
- Place the dish in the oven and roast for about 30-40 minutes.
- Sprinkle with fresh herbs before serving.
- Serve and enjoy!
