Description

A warm, hearty dish combining butternut squash and chicken, perfect for fall.


Ingredients

  • 1 medium butternut squash (about 2 pounds)
  • 2 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Olive oil, as needed
  • Fresh herbs (rosemary or thyme)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise, scoop out the seeds, and slice it into cubes.
  3. Rub the chicken breasts with olive oil, smoked paprika, salt, and pepper.
  4. In a baking dish, combine chicken, butternut squash, chopped onion, and garlic. Drizzle more olive oil over the top and mix.
  5. Place the dish in the oven and roast for about 30-40 minutes.
  6. Sprinkle with fresh herbs before serving.
  7. Serve and enjoy!
