Description
A cozy autumn pizza topped with roasted butternut squash, caramelized onions, ricotta, mozzarella, and goat cheese.
Ingredients
1 medium butternut squash (peeled, seeded, thinly sliced)
2 tbsp olive oil, divided
1 tsp thyme
1 large yellow onion, thinly sliced
1 prepared pizza dough
1/2 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup crumbled goat cheese
Sea salt & pepper
Optional: balsamic glaze
Instructions
1. Preheat oven to 425°F. Roast squash slices with olive oil, thyme, salt, and pepper for 20 minutes.
2. Caramelize onions in skillet with olive oil for 20–25 minutes.
3. Roll out pizza dough onto sheet or stone.
4. Spread ricotta, sprinkle mozzarella, layer squash and onions, add goat cheese.
5. Bake 12–15 minutes until crust golden and cheese bubbling.
6. Cool slightly, drizzle balsamic glaze, slice, and serve.
Notes
Slice squash thinly for quicker roasting.
Caramelize onions ahead for convenience.
Use arugula or walnuts as additional toppings.
Reheat leftovers at 350°F for best texture.
