Description

A creamy and delicious casserole packed with nutritious broccoli, cauliflower, and cottage cheese, perfect for sneaking more veggies into your meals.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 1/2 cup bread crumbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Steam the broccoli and cauliflower for about 5 minutes until tender, then drain.
  3. Mix cottage cheese, milk, garlic powder, and a sprinkle of salt and pepper in a bowl until smooth.
  4. Combine the steamed veggies with the cottage cheese mixture, then top with shredded cheddar and optional bread crumbs.
  5. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  6. Serve warm and enjoy!

Notes

Leftovers keep well in the fridge for about 3-5 days. Can substitute cottage cheese with Greek yogurt for a healthier option.
