A refreshing and customizable bow tie pasta salad perfect for summer gatherings.
Ingredients

- 8 ounces bow tie pasta, cooked and cooled
- Diced bell peppers
- Cherry tomatoes
- Cucumber
- Red onion
- Diced chicken, chickpeas, or pepperoni
- Feta or mozzarella balls
- Store-bought Italian dressing or homemade dressing (1/4 cup olive oil, 2 tablespoons vinegar, 1 teaspoon Dijon mustard, salt and pepper to taste)
- Optional: Fresh herbs (basil, parsley, dill), toasted pine nuts or walnuts, olives
Instructions
- Cook the pasta in salted water according to package instructions (about 10-12 minutes). Drain, rinse with cold water, and cool.
- Chop the veggies into bite-sized pieces.
- In a large mixing bowl, combine the cooled pasta, chopped veggies, protein, and cheese.
- Prepare dressing by whisking together olive oil, vinegar, Dijon mustard, salt, and pepper. Pour over the salad and stir to combine.
- Chill in the fridge for at least 30 minutes before serving.
Notes
For best results, don’t overcook the pasta and make the salad a day ahead for enhanced flavors.
