Description

A refreshing and customizable bow tie pasta salad perfect for summer gatherings.


Ingredients

Scale
  • 8 ounces bow tie pasta, cooked and cooled
  • Diced bell peppers
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Diced chicken, chickpeas, or pepperoni
  • Feta or mozzarella balls
  • Store-bought Italian dressing or homemade dressing (1/4 cup olive oil, 2 tablespoons vinegar, 1 teaspoon Dijon mustard, salt and pepper to taste)
  • Optional: Fresh herbs (basil, parsley, dill), toasted pine nuts or walnuts, olives

Instructions

  1. Cook the pasta in salted water according to package instructions (about 10-12 minutes). Drain, rinse with cold water, and cool.
  2. Chop the veggies into bite-sized pieces.
  3. In a large mixing bowl, combine the cooled pasta, chopped veggies, protein, and cheese.
  4. Prepare dressing by whisking together olive oil, vinegar, Dijon mustard, salt, and pepper. Pour over the salad and stir to combine.
  5. Chill in the fridge for at least 30 minutes before serving.

Notes

For best results, don’t overcook the pasta and make the salad a day ahead for enhanced flavors.
