Description

A delightful twist on a classic pecan pie, enhanced with bourbon and chocolate for a rich, flavorful treat.


Ingredients

  • 1 ½ cups pecans (halved or chopped)
  • 1 cup dark chocolate chips (bittersweet or semi-sweet)
  • ¾ cup light corn syrup
  • ¾ cup brown sugar (packed)
  • ½ cup granulated sugar
  • ½ cup unsalted butter (melted)
  • 3 large eggs
  • ¼ cup bourbon
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 pre-made pie crust

Instructions

  1. Preheat the oven to 350°F.
  2. If using a homemade pie crust, prepare by mixing flour, salt, and sugar, cutting in butter, and adding ice water. Chill for at least 30 minutes.
  3. Roll out the crust and fit it into a 9-inch pie pan. Pre-bake for 10-15 minutes.
  4. In a large bowl, whisk together melted butter, corn syrup, brown sugar, and granulated sugar until well combined.
  5. Add in eggs, bourbon, vanilla extract, and salt, mixing until smooth.
  6. Fold in dark chocolate chips and pecans.
  7. Pour the filling into the pre-baked crust.
  8. Bake for 40-50 minutes until the center is set but slightly jiggly. Cover edges with foil if browning too quickly.
  9. Let the pie cool to room temperature and then chill in the fridge for at least 1 hour before serving.
  10. Serve with whipped cream or vanilla ice cream, and enjoy!
