Ingredients

- 2 cups rolled oats
- 1 cup fresh or frozen blueberries
- 1/2 cup honey or maple syrup
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Pinch of salt
- Optional: nuts or seeds for added crunch
Instructions
- Preheat your oven to 350°F (175°C).
- Mix dry ingredients: In a large bowl, combine rolled oats, almond flour, baking powder, and salt.
- Mix wet ingredients: In another bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and stir until combined. Gently fold in blueberries.
- Bake the mixture in a greased or lined baking dish for 25–30 minutes or until golden brown.
- Cool completely before cutting into bars.
Notes
Feel free to experiment with adding nuts, coconut flakes, or chocolate chips based on your preferences.
