Description

Ingredients

  • 2 cups rolled oats
  • 1 cup fresh or frozen blueberries
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • Optional: nuts or seeds for added crunch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine rolled oats, almond flour, baking powder, and salt.
  3. Mix wet ingredients: In another bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until combined. Gently fold in blueberries.
  5. Bake the mixture in a greased or lined baking dish for 25–30 minutes or until golden brown.
  6. Cool completely before cutting into bars.
