Description

A delightful pasta salad combining the classic flavors of a BLT sandwich with the comforting texture of pasta, perfect for summer gatherings.


Ingredients

  • 12 oz. rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 2 cups chopped romaine lettuce
  • 810 slices crispy bacon
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil.
  2. Add pasta and cook according to package instructions until al dente.
  3. Drain the pasta and rinse under cold water to stop the cooking process.
  4. Cook bacon in a skillet over medium heat until crispy. Chop into bite-sized pieces.
  5. Chop lettuce, halve tomatoes, and prepare cheese.
  6. In a large bowl, mix the cooled pasta, bacon, lettuce, tomatoes, and cheese.
  7. In a separate bowl, whisk together mayonnaise, lemon juice, salt, and pepper.
  8. Pour the dressing over the pasta salad and gently toss until evenly coated.
  9. Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

Make ahead for best flavor. Can customize by swapping bacon with turkey bacon or adding other veggies like bell peppers.
