A deliciously refreshing pasta salad with vibrant veggies, cheese, and zesty Italian dressing, perfect for any gathering.


Ingredients

  • Fusilli or penne pasta
  • Bell peppers (varied colors)
  • Cherry tomatoes
  • Cucumbers
  • Feta or mozzarella cheese
  • Grilled chicken or chickpeas (optional)
  • Italian dressing

Instructions

  1. Boil water, salt it generously and cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. Chop bell peppers, halve cherry tomatoes, and dice cucumbers into bite-sized pieces.
  3. In a big mixing bowl, combine cooled pasta, chopped veggies, crumbled feta or diced mozzarella, and grilled chicken or chickpeas if using.
  4. Pour Italian dressing over the salad and toss lightly to coat.
  5. Let the salad chill in the fridge for at least 30 minutes before serving.
  6. Before serving, give it a stir and adjust dressing or cheese as desired.
