A deliciously refreshing pasta salad with vibrant veggies, cheese, and zesty Italian dressing, perfect for any gathering.
Ingredients
- Fusilli or penne pasta
- Bell peppers (varied colors)
- Cherry tomatoes
- Cucumbers
- Feta or mozzarella cheese
- Grilled chicken or chickpeas (optional)
- Italian dressing
Instructions
- Boil water, salt it generously and cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
- Chop bell peppers, halve cherry tomatoes, and dice cucumbers into bite-sized pieces.
- In a big mixing bowl, combine cooled pasta, chopped veggies, crumbled feta or diced mozzarella, and grilled chicken or chickpeas if using.
- Pour Italian dressing over the salad and toss lightly to coat.
- Let the salad chill in the fridge for at least 30 minutes before serving.
- Before serving, give it a stir and adjust dressing or cheese as desired.
