A delightful mix of gooey tortellini, savory meats, crisp veggies, and a tangy homemade Italian dressing.


Ingredients

  • 1 pound tortellini (cooked and cooled)
  • 4 ounces salami (chopped)
  • 4 ounces pepperoni (sliced)
  • 1 cup black olives (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 medium red onion (thinly sliced)
  • 1 bell pepper (diced)
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup fresh parsley (chopped)
  • 1 cup Italian dressing (store-bought or homemade)
  • Optional: Chickpeas, artichoke hearts, pepperoncini

Instructions

  1. Cook the tortellini according to package directions, drain, and run under cold water to cool.
  2. In a large bowl, combine all the ingredients: tortellini, meats, veggies, and cheese.
  3. Pour the homemade Italian dressing over the top and toss well.
  4. Cover and refrigerate for at least 30 minutes to let the flavors meld.
