Ingredients

- 1 pound tortellini (cooked and cooled)
- 4 ounces salami (chopped)
- 4 ounces pepperoni (sliced)
- 1 cup black olives (sliced)
- 1 cup cherry tomatoes (halved)
- 1 medium red onion (thinly sliced)
- 1 bell pepper (diced)
- 1/2 cup Parmesan cheese (grated)
- 1/4 cup fresh parsley (chopped)
- 1 cup Italian dressing (store-bought or homemade)
- Optional: Chickpeas, artichoke hearts, pepperoncini
Instructions
- Cook the tortellini according to package directions, drain, and run under cold water to cool.
- In a large bowl, combine all the ingredients: tortellini, meats, veggies, and cheese.
- Pour the homemade Italian dressing over the top and toss well.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
Notes
