Description

A scrumptiously moist strawberry cake that’s perfect for any occasion, combining the fruity goodness of strawberries with soft, fluffy cake.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter
  • 4 large eggs
  • 1 cup buttermilk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, chopped
  • ½ cup strawberry puree
  • 1 cup unsalted butter (for frosting)
  • 4 cups powdered sugar
  • 2–4 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round baking pans.
  2. Mix the butter and sugar in a large bowl until fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Pour in the buttermilk and vanilla extract, mixing until combined.
  5. Whisk together the flour and baking powder in a separate bowl and gradually add to the wet ingredients, mixing until just combined.
  6. Fold in the fresh strawberries and strawberry puree until integrated.
  7. Divide the batter evenly between the two pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
  9. Beat the butter for the frosting until light and fluffy.
  10. Gradually add the powdered sugar, beating until smooth, then add heavy cream and vanilla extract until reaching desired consistency.
  11. Assemble the cake by placing one layer on a serving plate, frosting it generously, and adding the second layer on top. Frost the top and sides, and garnish with fresh strawberries.

Notes

Use fresh strawberries for the best flavor. You can make the cakes ahead of time and frost the next day.
