- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 cup corn syrup (light or dark)
- 1 cup brown sugar
- 1/4 cup unsalted butter
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix flour, powdered sugar, and salt. Add cubed butter and mix until it resembles clumpy sand.
- Press the mixture into the bottom of the baking dish and bake for 15 minutes until golden brown. Let it cool.
- In the same bowl, combine corn syrup, brown sugar, butter, eggs, and vanilla. Whisk until smooth.
- Fold in pecan halves and pour over the cooled crust, spreading evenly.
- Bake for another 25-30 minutes until the filling is set and bubbly.
- Let cool completely in the pan before slicing into squares.
- Dust with powdered sugar or drizzle with caramel sauce before serving.
Notes
Store leftovers in the fridge for up to 5 days with parchment between layers if stacked.
