A comforting one-pot lasagna soup that’s easy to make and packed with flavor, perfect for cozy weeknights.
Ingredients

- 1 lb ground beef (or turkey, or plant-based meat)
- 1 medium onion, chopped
- 2–3 cloves garlic, minced
- 2 cups chicken broth (or vegetable broth)
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 2 cups uncooked pasta (preferably rotini)
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 2 cups fresh spinach (optional)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot over medium heat, add your ground meat. Brown it until it’s fully cooked, about 5-7 minutes.
- Toss in the chopped onion and minced garlic, stirring frequently until the onion becomes translucent.
- Pour in the chicken broth, tomato sauce, diced tomatoes, uncooked pasta, and Italian seasoning. Stir well.
- Bring the mixture to a boil, then lower the heat and cover. Let it simmer for about 15-20 minutes, stirring occasionally.
- When the pasta is cooked, stir in the fresh spinach and add dollops of ricotta cheese. Top with mozzarella cheese.
- Ladle the soup into bowls and garnish with fresh basil. Serve with crusty bread.
Notes
Customize flavors by adding crushed red pepper flakes or extra herbs. The soup can be stored in the fridge for up to three days or frozen for later.
