A delicious and vibrant Broccoli Pasta Salad that combines crunchy broccoli, al dente pasta, and a flavorful dressing, perfect for any gathering.
Ingredients
- Pasta (penne, rotini, or fusilli)
- Fresh Broccoli
- Cherry Tomatoes
- Red Onion
- Feta Cheese
- Olives (green or black)
- Olive Oil
- Lemon Juice
- Vinegar
- Salt and Pepper
Instructions
- Cook the pasta in boiling salted water according to package directions (8-10 minutes). Reserve a cup of pasta water.
- Blanch the broccoli in boiling water for 2-3 minutes, then transfer to an ice bath.
- Chop cherry tomatoes, red onion, and crumble feta cheese.
- Make the dressing by shaking olive oil, lemon juice, vinegar, salt, and pepper in a jar. Add reserved pasta water if desired.
- In a large bowl, mix the pasta, broccoli, chopped veggies, olives, and feta. Toss with the dressing.
- Chill in the fridge for at least 30 minutes before serving.
Notes
You can add chicken or tofu for extra protein or mix in other veggies like bell peppers or carrots.
