Ingredients

  • 1 lb tender beef (sirloin or filet mignon), sliced into thin strips
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 2 cups beef broth
  • 2 tablespoons flour
  • 1 tablespoon Worcestershire sauce (optional)
  • 1 teaspoon paprika (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Slice the beef into thin strips and season with salt and pepper.
  2. Heat a skillet with oil and brown the beef in batches, then remove and set aside.
  3. Sauté onions and garlic in the same pan until soft, then add mushrooms and cook until tender.
  4. Sprinkle flour over the veggies and stir, then pour in the beef broth while scraping the pan.
  5. Add Worcestershire sauce and paprika for extra flavor.
  6. Return the beef to the pan, stir in sour cream, and simmer gently for a few minutes.
  7. Serve over noodles or rice and garnish with parsley.

Notes

For extra creaminess, add more sour cream or a splash of heavy cream. Use grass-fed beef for the best flavor.
