- 1 lb beef sirloin or filet mignon
- 8 oz fresh mushrooms (cremini or button), sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup sour cream
- 2 cups beef broth
- 8 oz egg noodles or pasta of choice
- Salt and pepper, to taste
- Oil, for searing
- Fresh parsley, for serving
Instructions
- Prep your ingredients: Chop mushrooms, onions, and garlic. Slice beef into thin strips against the grain.
- Sear the beef: Heat oil in a skillet over medium-high heat, add beef strips, and sear until browned (about 3-4 minutes). Remove beef but keep the oil.
- Cook the veggies: In the same skillet, sauté onions and garlic until translucent (about 3 minutes). Add mushrooms and cook until tender.
- Build the sauce: Return beef to the skillet; pour in the beef broth and bring to a boil. Lower heat and simmer for 10 minutes. Stir in sour cream and season.
- Serve it up: Cook pasta according to package instructions. Toss cooked noodles in the beef mixture, adding reserved pasta water if needed. Serve with fresh parsley.
Notes
For a vegetarian option, substitute beef with mushrooms and increase the quantity. Ensure to use good quality beef broth for better flavor.
