A hearty beef stew packed with protein and vegetables, perfect for a cozy family meal.
Ingredients

- 2 lbs Beef Chuck
- 4 Carrots, chopped
- 3 Potatoes, diced
- 2 Celery stalks, chopped
- 1 Onion, chopped
- 4 cups Beef Broth
- 2 tbsp Tomato Paste
- 2 tsp Thyme
- 2 Bay Leaves
- Salt and Pepper, to taste
- 1 cup Red Wine (optional)
- 1 cup Peas (optional, added at the end)
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add olive oil and wait for it to shimmer.
- Season the beef with salt and pepper, then sear until it’s brown on all sides. Remove and set aside.
- In the same pot, add chopped onions and cook until soft. Incorporate garlic and sauté for another minute.
- Return the beef to the pot, add carrots, celery, and potatoes. Pour in beef broth and red wine (if using).
- Add herbs, tomato paste, stir well, and bring the stew to a boil.
- Reduce to a simmer, cover, and let it bubble away for at least 120 minutes.
- About 20 minutes before finishing, add peas. Taste and adjust seasoning as needed.
Notes
Beef stew tastes even better the next day. You can freeze it for up to 3 months.
