Beef Stew: Comfort Food in a Bowl

Description

A hearty beef stew packed with protein and vegetables, perfect for a cozy family meal.


Ingredients

  • 2 lbs Beef Chuck
  • 4 Carrots, chopped
  • 3 Potatoes, diced
  • 2 Celery stalks, chopped
  • 1 Onion, chopped
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 2 tsp Thyme
  • 2 Bay Leaves
  • Salt and Pepper, to taste
  • 1 cup Red Wine (optional)
  • 1 cup Peas (optional, added at the end)

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add olive oil and wait for it to shimmer.
  2. Season the beef with salt and pepper, then sear until it’s brown on all sides. Remove and set aside.
  3. In the same pot, add chopped onions and cook until soft. Incorporate garlic and sauté for another minute.
  4. Return the beef to the pot, add carrots, celery, and potatoes. Pour in beef broth and red wine (if using).
  5. Add herbs, tomato paste, stir well, and bring the stew to a boil.
  6. Reduce to a simmer, cover, and let it bubble away for at least 120 minutes.
  7. About 20 minutes before finishing, add peas. Taste and adjust seasoning as needed.

Notes

Beef stew tastes even better the next day. You can freeze it for up to 3 months.
