Description
A light, high-protein bariatric gelatin recipe that supports fullness, appetite control, and post-bariatric recovery while still tasting refreshing.
Ingredients
2 cups (480 ml) unsweetened fruit juice, herbal tea, or coconut water
1/4 cup (60 ml) cool water for blooming gelatin
2 tablespoons (about 20 g) unflavored gelatin powder
1 scoop (10–15 g) collagen or whey protein powder
Natural zero-calorie sweetener to taste (stevia, monk fruit, or erythritol)
1 tablespoon fresh lemon juice (optional, for brightness)
1 teaspoon finely grated lemon zest (optional)
Fresh mint leaves for garnish (optional)
Instructions
1. Lightly grease or spray a glass dish or silicone molds and set them aside.
2. Pour the cool water into a small bowl, sprinkle the unflavored gelatin evenly over the top, and let it bloom for 3–5 minutes.
3. Warm the unsweetened juice, herbal tea, or coconut water in a saucepan over medium heat until it steams but does not boil.
4. Add the bloomed gelatin to the warm liquid and whisk steadily until the gelatin dissolves completely and the mixture looks smooth.
5. Whisk in the collagen or whey protein powder until fully incorporated, then sweeten to taste with your preferred natural sweetener.
6. Stir in the lemon juice and lemon zest if using, and skim any foam from the surface for a clear finish.
7. Pour the mixture into the prepared dish or molds, then place it in the refrigerator to chill for 3–4 hours or until fully set.
8. Slice into small squares or unmold individual portions, garnish with fresh mint if desired, and serve chilled.
Notes
Store the bariatric gelatin recipe in an airtight container in the refrigerator for up to 4 days.
For a milder flavor, use herbal tea or diluted juice; for a brighter taste, keep the lemon juice and zest.
If you follow a vegetarian or vegan plan, test agar-agar as a substitute, but adjust the quantity and setting time according to the package directions.
Start with small portions if you are post-bariatric surgery and increase only after your healthcare team approves it.
Avoid adding sugar-heavy toppings; instead, use fresh citrus slices, mint, or a small spoon of Greek yogurt if your plan allows.
