- 1 lb fresh salmon, skinless and deboned
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper to taste
- Oil for frying (canola or vegetable)
- 1/3 cup mayonnaise
- 3 tbsp sriracha
- 1 tbsp honey
- 1 tsp lime juice
- Cooked rice (brown or white)
- Favorite toppings (chopped green onions, sliced avocado, cucumber slices, sesame seeds, mango salsa)
Instructions
- Prep the salmon by cutting it into bite-sized cubes.
- Set up a breading station with flour, eggs, and panko breadcrumbs.
- Dip each salmon piece in flour, then egg wash, and coat with panko breadcrumbs.
- Heat oil in a frying pan and fry the salmon bites until golden brown.
- Make the Bang Bang sauce by mixing mayonnaise, sriracha, honey, and lime juice.
- Assemble the bowl with rice, salmon bites, and drizzle with Bang Bang sauce.
Notes
For a healthier option, bake the salmon bites at 400°F (200°C) for 12-15 minutes.
