- 1 lb. salmon fillet
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 1 large egg
- Salt & pepper (to taste)
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- Cut your salmon into bite-sized pieces—about 1-inch cubes.
- Mix together the flour, salt, and pepper in one bowl.
- Whisk the egg until frothy in another bowl.
- Place the panko breadcrumbs in a third bowl.
- Coat each salmon piece in flour, then dip in the egg wash, and finally roll in the panko breadcrumbs.
- Bake the coated salmon bites on a prepared baking sheet for 12-15 minutes, until golden brown.
- Mix the mayonnaise, sweet chili sauce, sriracha, and garlic powder in a small bowl to make the bang bang sauce.
- Toss the baked salmon bites in the sauce or drizzle over them for serving.
