Description

A spicy and flavorful twist on fried rice, packed with veggies and your choice of protein.


Ingredients

Scale
  • 2 cups day-old rice
  • 1 tablespoon sesame oil
  • 1 cup protein (cubed chicken, shrimp, or tofu)
  • 2 cups mixed vegetables (bell peppers, peas, carrots)
  • 2 eggs (whisked)
  • 3 tablespoons soy sauce
  • 12 tablespoons sweet chili sauce
  • 1 teaspoon chili flakes (adjust to taste)
  • Green onions and sesame seeds for garnishing
  • Salt and pepper to taste

Instructions

  1. Heat a wok or large skillet and add the sesame oil.
  2. Toss in your protein and cook until fully cooked.
  3. Add the mixed vegetables and cook until tender but crisp.
  4. Push everything to the side and pour in the whisked eggs to scramble.
  5. Add the day-old rice and break up any clumps, mixing with other ingredients.
  6. Drizzle soy sauce and sweet chili sauce over the rice.
  7. Stir until everything is heated through and well-coated.
  8. Taste and season with salt, pepper, or more chili flakes as desired.
  9. Serve hot, garnished with green onions and sesame seeds.

Notes

For best results, use day-old rice and avoid overcrowding the pan for even cooking.
