A spicy and flavorful twist on fried rice, packed with veggies and your choice of protein.
Ingredients

- 2 cups day-old rice
- 1 tablespoon sesame oil
- 1 cup protein (cubed chicken, shrimp, or tofu)
- 2 cups mixed vegetables (bell peppers, peas, carrots)
- 2 eggs (whisked)
- 3 tablespoons soy sauce
- 1–2 tablespoons sweet chili sauce
- 1 teaspoon chili flakes (adjust to taste)
- Green onions and sesame seeds for garnishing
- Salt and pepper to taste
Instructions
- Heat a wok or large skillet and add the sesame oil.
- Toss in your protein and cook until fully cooked.
- Add the mixed vegetables and cook until tender but crisp.
- Push everything to the side and pour in the whisked eggs to scramble.
- Add the day-old rice and break up any clumps, mixing with other ingredients.
- Drizzle soy sauce and sweet chili sauce over the rice.
- Stir until everything is heated through and well-coated.
- Taste and season with salt, pepper, or more chili flakes as desired.
- Serve hot, garnished with green onions and sesame seeds.
Notes
For best results, use day-old rice and avoid overcrowding the pan for even cooking.
