Ingredients

  • 1 lb boneless chicken breasts or thighs
  • Salt & pepper
  • 1 cup flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Oil for frying
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 12 tbsp sriracha
  • 1 tsp garlic powder
  • Cooked rice (white, brown, or cauliflower)
  • Cucumber slices
  • Shredded carrots
  • Chopped green onions
  • Sesame seeds

Instructions

  1. Season the chicken with salt and pepper. Create a dipping station with flour, beaten eggs, and panko breadcrumbs.
  2. Dip chicken pieces in flour, egg, and then coat with panko.
  3. Heat oil in a skillet and fry chicken until golden brown, about 5-7 minutes per side.
  4. Mix all Bang Bang sauce ingredients in a bowl.
  5. Assemble the bowl with rice, fried chicken, Bang Bang sauce, cucumber, shredded carrots, green onions, and sesame seeds.

Notes

For a vegetarian option, substitute chicken with tofu or tempeh. Great for meal prep by keeping ingredients separate until serving.
