- 1 lb boneless chicken breasts or thighs
- Salt & pepper
- 1 cup flour
- 2 large eggs
- 1 cup panko breadcrumbs
- Oil for frying
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1–2 tbsp sriracha
- 1 tsp garlic powder
- Cooked rice (white, brown, or cauliflower)
- Cucumber slices
- Shredded carrots
- Chopped green onions
- Sesame seeds
Instructions
- Season the chicken with salt and pepper. Create a dipping station with flour, beaten eggs, and panko breadcrumbs.
- Dip chicken pieces in flour, egg, and then coat with panko.
- Heat oil in a skillet and fry chicken until golden brown, about 5-7 minutes per side.
- Mix all Bang Bang sauce ingredients in a bowl.
- Assemble the bowl with rice, fried chicken, Bang Bang sauce, cucumber, shredded carrots, green onions, and sesame seeds.
Notes
For a vegetarian option, substitute chicken with tofu or tempeh. Great for meal prep by keeping ingredients separate until serving.
