Description

A delicious and easy-to-make pasta dish featuring creamy feta cheese, roasted cherry tomatoes, and your choice of pasta. Perfect for impressing dinner guests without the stress!


Ingredients

  • 1 block Feta Cheese
  • 2 pints Cherry Tomatoes
  • Olive Oil (to taste)
  • 46 Garlic cloves
  • Herbs (Basil, Oregano, or your choice)
  • Pasta of your choice (Penne or Farfalle recommended)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). In a baking dish, toss in the cherry tomatoes and place the feta in the center. Drizzle with olive oil, smash the garlic cloves, and sprinkle with herbs, salt, and pepper.
  2. Bake for 25-30 minutes or until tomatoes are bursting and feta is golden.
  3. While baking, cook pasta according to package instructions and reserve 1 cup of pasta water.
  4. Once baked, mash the feta and tomatoes to create a creamy sauce. Mix in the cooked pasta, adding reserved pasta water as needed for consistency.
  5. Serve with fresh herbs or grated cheese, and enjoy!

Notes

If desired, you can add grilled chicken or shrimp for extra protein. This dish tastes even better as leftovers!
