- 1 block Feta Cheese
- 2 pints Cherry Tomatoes
- Olive Oil (to taste)
- 4–6 Garlic cloves
- Herbs (Basil, Oregano, or your choice)
- Pasta of your choice (Penne or Farfalle recommended)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C). In a baking dish, toss in the cherry tomatoes and place the feta in the center. Drizzle with olive oil, smash the garlic cloves, and sprinkle with herbs, salt, and pepper.
- Bake for 25-30 minutes or until tomatoes are bursting and feta is golden.
- While baking, cook pasta according to package instructions and reserve 1 cup of pasta water.
- Once baked, mash the feta and tomatoes to create a creamy sauce. Mix in the cooked pasta, adding reserved pasta water as needed for consistency.
- Serve with fresh herbs or grated cheese, and enjoy!
Notes
If desired, you can add grilled chicken or shrimp for extra protein. This dish tastes even better as leftovers!
