- 3 large eggs
- 1 cup of sugar
- 1 cup of milk
- ½ cup of all-purpose flour
- ½ cup of fresh lemon juice
- 1 tablespoon of lemon zest
- 1 teaspoon of vanilla extract
- ¼ teaspoon of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Gather all ingredients.
- Blend eggs, sugar, milk, flour, lemon juice, zest, vanilla, and salt in a blender until smooth.
- Pour the blended mixture into greased muffin tins or mini pie dishes.
- Bake for 25-30 minutes until the tops are golden and a toothpick inserted comes out clean.
- Cool for a bit and serve with whipped cream.
Notes
Don’t skip the lemon zest for added flavor. Experiment with other flavors like coconut milk or lavender.
