Description

Delightful mini pies that magically create their own crust while baking, combining a custard-like filling with a golden crust.


Ingredients

  • 3 large eggs
  • 1 cup of sugar
  • 1 cup of milk
  • ½ cup of all-purpose flour
  • ½ cup of fresh lemon juice
  • 1 tablespoon of lemon zest
  • 1 teaspoon of vanilla extract
  • ¼ teaspoon of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Gather all ingredients.
  3. Blend eggs, sugar, milk, flour, lemon juice, zest, vanilla, and salt in a blender until smooth.
  4. Pour the blended mixture into greased muffin tins or mini pie dishes.
  5. Bake for 25-30 minutes until the tops are golden and a toothpick inserted comes out clean.
  6. Cool for a bit and serve with whipped cream.

Notes

Don’t skip the lemon zest for added flavor. Experiment with other flavors like coconut milk or lavender.
