Description

A vibrant and colorful autumn salad topped with a luscious maple vinaigrette that combines seasonal flavors and textures.


Ingredients

Scale
  • Mixed greens (arugula or spinach)
  • Kale
  • Apple slices
  • Pomegranate seeds
  • Dried cranberries
  • Roasted butternut squash
  • Sliced red onion
  • Candied pecans or walnuts
  • Pumpkin seeds
  • Feta or goat cheese (optional)
  • ¼ cup pure maple syrup
  • ¼ cup apple cider vinegar
  • ½ cup olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a jar or bowl, mix the maple syrup and apple cider vinegar. Whisk or shake until combined.
  2. Slowly add the olive oil while whisking to emulsify.
  3. Add salt and pepper to taste.
  4. In a large bowl, layer the mixed greens or kale as the base.
  5. Add in the apple slices, pomegranate seeds, dried cranberries, roasted butternut squash, sliced red onion, nuts, and cheese.
  6. Drizzle the maple vinaigrette over the salad and toss gently to combine.

Notes

Make a double batch of the vinaigrette and store it in the fridge for up to a week. Shake well before using.
