Description

A refreshing and colorful salad combining tender asparagus and sweet cherry tomatoes, perfectly dressed and garnished with fresh basil.


Ingredients

  • 1 bunch of fresh asparagus, trimmed
  • 1 cup of cherry tomatoes, halved
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Prep the asparagus by trimming the tough ends and rinsing under cold water. Optionally, blanch for 2-3 minutes, then plunge into ice water.
  2. Halve the cherry tomatoes.
  3. Toss the asparagus and tomatoes in a medium bowl with olive oil, balsamic vinegar, salt, and pepper until well coated.
  4. Garnish with fresh basil just before serving.

Notes

For added protein, consider adding grilled chicken, chickpeas, feta cheese, or avocado. Serve as a side dish or a standalone meal.
