Description
A refreshing and colorful salad combining tender asparagus and sweet cherry tomatoes, perfectly dressed and garnished with fresh basil.
Ingredients

- 1 bunch of fresh asparagus, trimmed
- 1 cup of cherry tomatoes, halved
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Prep the asparagus by trimming the tough ends and rinsing under cold water. Optionally, blanch for 2-3 minutes, then plunge into ice water.
- Halve the cherry tomatoes.
- Toss the asparagus and tomatoes in a medium bowl with olive oil, balsamic vinegar, salt, and pepper until well coated.
- Garnish with fresh basil just before serving.
Notes
For added protein, consider adding grilled chicken, chickpeas, feta cheese, or avocado. Serve as a side dish or a standalone meal.
