Description

A vibrant salad featuring peppery arugula, sweet apples, and crispy maple pecans, making it perfect for a fall feast.

Ingredients

Scale
  • 4 cups arugula
  • 2 apples (Fuji or Granny Smith), sliced
  • 1 cup maple pecans
  • 1/2 cup feta or goat cheese (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey or maple syrup

Instructions

  1. Wash the arugula and dry thoroughly.
  2. Core and slice the apples into thin wedges.
  3. Prepare maple pecans by tossing raw pecans in a pan with maple syrup over medium heat for about 5 minutes.
  4. In a small bowl, mix olive oil, balsamic vinegar, and honey to create the dressing.
  5. In a large bowl, combine arugula, apple slices, maple pecans, and cheese if using.
  6. Drizzle the dressing over the salad and toss lightly to coat.
  7. Plate and serve immediately.

Notes

For added protein, try grilled chicken or chickpeas. Use lemon juice on apple slices to prevent browning if preparing in advance.
