Description

A vibrant, fresh pasta salad featuring a delightful Green Goddess dressing, perfect for lunch or dinner.


Ingredients

  • 8 oz pasta (fusilli or penne recommended)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, cubed
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1/2 cup Green Goddess dressing
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with water and bring to a rolling boil. Add a generous pinch of salt.
  2. Add the pasta and cook according to package instructions until al dente, stirring occasionally.
  3. Drain the pasta and rinse with cold water to stop the cooking process.
  4. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, avocado, red onion, and fresh herbs.
  5. Drizzle with olive oil, lemon juice, and the Green Goddess dressing. Toss gently to combine.
  6. Add salt and pepper to taste and give it another gentle toss.

Notes

Feel free to customize with your favorite veggies or leave out the feta if desired.
