A vibrant, fresh pasta salad featuring a delightful Green Goddess dressing, perfect for lunch or dinner.
Ingredients

- 8 oz pasta (fusilli or penne recommended)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 bell pepper, diced
- 1 avocado, cubed
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/2 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1/2 cup Green Goddess dressing
- Salt and pepper to taste
Instructions
- Fill a large pot with water and bring to a rolling boil. Add a generous pinch of salt.
- Add the pasta and cook according to package instructions until al dente, stirring occasionally.
- Drain the pasta and rinse with cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, avocado, red onion, and fresh herbs.
- Drizzle with olive oil, lemon juice, and the Green Goddess dressing. Toss gently to combine.
- Add salt and pepper to taste and give it another gentle toss.
Notes
Feel free to customize with your favorite veggies or leave out the feta if desired.
